Gluten Free Oatmeal Muffins

Ingredients
  • 1 cup gluten free rolled oats
  • 1 cup gluten free flour
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons coconut sugar (omit for sugar free)
  • 2 eggs
  • 1 cup unsweetened applesauce
  • ¼ cup coconut oil, melted
  • ¾ cup milk of choice
  • 1 teaspoon pure vanilla extract
  • 1 cup of your choice of add in (chocolate chips, blueberries, chopped apples, raisins, chopped nuts, etc)
Instructions
  1. Preheat oven to 400 degrees.
  2. In a bowl stir together the oats, flour, cinnamon, salt, baking soda and powder, coconut sugar.
  3. In separate bowl combine eggs, applesauce, coconut oil, milk, and vanilla.
  4. Pour wet into dry.
  5. Stir well.
  6. Gently mix in your choice of add in.
  7. Using a ¼ cup, pour the batter evenly into baking cups
  8. Bake for 20-25 minutes or until a toothpick in center comes out clean.
